Carrots supply carotenoids (vitamin A precursors) that protect thyroid tissue and strengthen the gut lining. Ginger is well-studied for reducing inflammatory markers and supporting digestion. This helps in calming both bloating and immune overactivity.
The Science in Your Bowl
- Carrots: beta-carotene → supports epithelial tissue, gut barrier, and thyroid function.
- Ginger: reduces pro-inflammatory cytokines (IL-6, TNF-α), improves motility.
- Turmeric: curcumin modulates NF-κB and calms systemic inflammation.
- Dairy free milk: creaminess without dairy (a common autoimmune trigger).
Carrot–Ginger Soup Recipe
Ingredients
- 1 Tablespoon onion
- 1 lb carrots, rough chopped
- 1 inch fresh ginger
- 3 cups vegetable broth
- 1 cup unsweetened almond or hemp milk
- 1 teaspoon turmeric
- Sea salt + pepper
Instructions
- Starting with the dairy free milk, add everything to a blender.
- Blend until smooth and creamy.
- Taste and adjust seasoning.
- Gently warm on the stove or place in the dehydrator for 30 minutes to warm through.
- Serve warm.
