This is a recipe that I use just about every week. It can be a dressing but easily turns into a dip, a sauce for bowls, or something to pour over a sheet pan meal or steamed veggies.
What I like about this version is that it keeps the familiar flavor people, but it is created from whole ingredients that support the body. It is creamy without oil, balanced without added sugar, and flexible enough to adjust depending on what you need.
This is also a recipe that I use often when I am teaching, because it shows how a few ingredients can come together in a way that makes meals feel complete without adding more time or ingredients.

Mexi Ranch Dressing
This recipe comes together quickly in a blender and can be adjusted for thickness depending on how you plan to use it.
Ingredients
* ½ cup cashews
* ½ zucchini (peeled if you prefer a lighter color, unpeeled works well)
* ¼ cup water
* 1 lemon, juiced
* ½ teaspoon garlic powder
* ½ teaspoon onion powder
* ½ teaspoon sea salt
* ½ teaspoon paprika
* 1 teaspoon cumin
* ¼ teaspoon chipotle powder
Instructions
- Add all ingredients to a high-speed blender. Blend until completely smooth and creamy, stopping to scrape down the sides if needed.
- Adjust the consistency by adding a small amount of water if you prefer a thinner dressing.
*For a thicker dip, use as is or reduce the added water slightly
- Taste and adjust seasoning if needed, depending on how you plan to use it.
How This Fits Into a Supportive Meal
This dressing is a way to add flavor and satisfaction while still supporting blood sugar balance and digestion.
Cashews provide fat and texture to help slow the absorption of a meal. The zucchini adds volume, creaminess, and a neutral base without heaviness. The spices add depth without relying on processed ingredients.
When you add something like this to a meal created with beans, vegetables, and whole plant foods, it becomes easier to stay consistent, because the meal feels complete.
How to Use It
This works well in a variety of ways depending on what you need:
- Drizzled over grain and bean bowls
- As a dip for raw or roasted vegetables
- Spread into wraps or layered into tacos
- Added to salads when you want something more substantial
It can also be used as a base and adjusted with additional lime, herbs, or spices depending on the meal.
How This Fits Into What I Teach
This is the kind of recipe I use when I am working with someone in a kitchen setting. It is simple, flexible, and uses ingredients most of us have on hand already.
When people learn how to eat this way, it is not about memorizing recipes. My passion is teaching, and I want you to understand how to created meals that feel complete and can be repeated without overthinking it.
This recipe is a good example of that. It takes a few ingredients, blends quickly, and can be used in multiple ways throughout the week. That is often what makes the difference between something that sounds good and something that actually gets used.* As a dip for raw or roasted vegetables
* Spread into wraps or layered into tacos
* Added to salads when you want something more substantial
It can also be used as a base and adjusted with additional lime, herbs, or spices depending on the meal.
Why Recipes Like This Matter
One of the biggest challenges people run into is not knowing how to make simple meals feel satisfying enough to repeat. Recipes like this help bridge that gap.
They allow you to keep the structure of your meals simple while adding enough flavor and texture to make the meal feel complete. That is something you actually can do and use easily and regularly.
Storage
Store this dressing in the refrigerator for up to 3–4 days. The texture may thicken slightly as it sits, so you can stir in a small amount of water before using if needed.
A Practical Approach to Flavor
This recipe supports consistency, because it is easy to make, easy to adjust, and works with what you already have on hand.
When meals are created from simple, whole ingredients, and supported with flavors like this, it becomes much easier to stay aligned with how you want to eat without feeling like you need something different every day.
