One of My Favorite Ways to Use Fresh Herbs

Garden Herb Chimichurri with Avocado

Ingredients

  • 1 cup fresh parsley
  • ½ cup fresh cilantro
  • ¼ cup fresh basil
  • 1 ripe avocado
  • 2 cloves garlic
  • 2 tablespoons fresh lime juice
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Freshly ground black pepper, to taste
  • Water, as needed for desired consistency

Directions

  1. Add all ingredients to a food processor or blender.
  2. Blend until smooth, adding water a tablespoon at a time until you reach your desired consistency.
  3. Taste and adjust the lime juice or seasonings as needed.
  4. Serve over roasted vegetables, bean bowls, baked potatoes, tacos, wraps, salads, or as a dip for fresh vegetables.
